Day 5: Honey Do Day

     I may have had my question answered on whether or not Christ Chapel participates in fasting during Lent. Today we went to our first service of the season, and not only was Lent no even brought up in the service, the service centered around christian artwork. It never good to say that church wasn’t up to par, but today, my soul did not feel fulfilled when I left, as it usually does. However, it was fulfilled as we brunched with some great friends at Tillman’s (http://www.tillmansroadhouse.com/eats_fw_blunch.html).                                    
     Unfortunately, there was not much for a vegetarian to eat on the brunch menu, so i ordered Grilled Cheese with their Soup DJ (black bean soup today). A round of Cinnamon rolls were ordered, and they were amazing! Too sweet to eat too much, which was perfect. One of the husbands we dined with is a culinarian (made up word, but you understand) like myself, so its always fun to chat about food. We also ran into a local fort worth food blogger, who also owns her own catering service here in town. So, needless to say, it appears that Tillman’s was the place to be for people who enjoy the culinary arts today.
     Sundays are always our “Honey-Do” days, so we’ve gone to Sam’s, done laundry, installed a key-remote for our garage, vacuumed, and picked out what I’m making for dinner. Now we are lumped up on the couch watching golf and going in and out of consciousness.
     Dinner is going to be easy and simple, but its something that you can spice up with different ingredients if you so chose. Central Market sells a line of dried bean and pasta soups and stews, Cherchie’s, which come complete with seasoning packets. They are fool proof and quite good. I always through out the seasoning packet and season to my own liking, but for those unsure of what seasonings should go in certain soups, the packet is the way to go.      Tonight soup is Split Pea and Lentil with Pasta and Sun-dried Tomatoes...my favorite. 
 
All you do is wash the beans in cold water, put in a pot with 10 cups of water, bring to a boil, simmer for 20 minutes, then add the pasta and tomato and bring to a boil again, then cover and allow 20 minutes of simmering and serve. You can add a protein if you’d like, such as shredded chicken, beef, or even bacon. A little tip the directions suggest is to saute an onion and some minced garlic in olive oil and add it to the soup when you add the pasta.
 
     In reality, you can add any vegetable you would like to this. Since the main ingredient is beans, starch veggies may not be such a good idea, but celery, diced peppers, or even spinach would be a great addition.
     The recipe I am posting for today is one of my absolute favorite breakfast recipes...Salmon Scramble with Egg Whites, Asparagus, and Cherry Tomatoes. Now, obviously the I will not be eating the salmon anytime soon, but its just as good without it, especially since my little secret to make the eggs extra creamy is the use of goat cheese! The best way to make this breakfast is to use left over salmon from the night before. That way all of the yummy seasonings have absorbed into the fish, creating a delicious flavor through the scramble.
Salmon Egg White Scramble

Ingredients
8 oz Fresh Salmon, chopped
12 egg whites
1/2 red onion, small dice
2 asparagus spears, chopped
4 cherry tomatoes, halved
1 tsp garlic, small dice
1/4 cup goat cheese

3 tsp, Chives, chopped
Salt
Pepper
 
Preparation
 
Place the chopped onion and asparagus spears in a saute pan and cook on medium heat for about 5 minutes or until cooked through.
Add the garlic and cook for an additional 30 seconds.
Place the chopped fresh salmon and halved tomatoes in the saute pan and cook about 2 minutes.
Add the egg whites with the goat cheese and cook until done.
Salt, pepper and sprinkle with chives at the last moment, and serve.
Serves 4
